Have you ever wondered how a blind person uses knives in the kitchen? You may be surprised, but it’s much easier than you think when we are cutting up meat and vegetables on the cutting board. Let’s say I have a green bell pepper. I place it upright, but hold it in a way that the fingers are tucked back so the knife is always on the other side of my knuckles. When it comes to cutting down the slices of bell pepper to bite sizes, the same technique is used. I use my finger to feel the size and then tuck back my fingers as I cut them down to bit sizes.
